Coconut Pudding!

A lovely pudding beautiful with tropical fruit, berries, kiwi, whipped up July 2 for Julia & Luca. No photo, sorry. Add a little coconut extract for extra coco flav. Make with unsweetened soymilk for jolielaide results!

Boil 2 C milk & 2 T minced fresh ginger in a medium, heavy saucepan. Take pan off heat as soon as it boils, so that it doesn't boil over. Let steep 15 mins, then pour milk through a fine strainer into a bowl.

In another bowl, whisk together 4 egg yolks and 1/2 C of the strained milk. Add 3/4 C sugar and 1/4 C cornstarch, and whisk til smooth. While whisking, slowly add 1 14-oz can coconut milk and the rest of the milk.

Return the mixture to the saucepan & place over medium heat. Whisk constantly until the pudding begins to boil. Continue whisking 2 mins. Add 1 T unsalted butter and whisk until it melts.

Pour pudding into a bowl and cover tightly with plastic wrap so a skin doesn't form. Chill at least 2 hrs. Serve with colorful fruit.
